Garage Sale Treasures!

There is something special about the weekends - garage sales! I don't know about you, but I love garage sales and flea markets. You never know what you might find. Last Saturday, I headed out by myself to hit some garage sales. It was a glorious day and I managed to get some good finds.

Our Facebook Celebrity

I was recently asked for a new picture of our doxie Marina to put on the Dachshund Rescue of South Florida Facebook page. They wanted an update since we had rescued her three years ago (she is now around 12 years old) and gave her her forever home.

Marina is the sweetest old girl and we were so surprised to find out that she had the most likes of any other dog - almost 6000 likes and over 300 comments.

Sticky Buns from Crescent Rolls

I have made many versions of sticky buns in my lifetime, but these ones have to be the easiest. I sent them into my husbands work yesterday. They put them in their toaster oven and reheated them so they were warm and gooey. They were a big hit.

Refreshing Mangoladas

They say if you are given lemons - make lemonade. What if you have tons of mangoes - make mangoladas!

This drink came about a couple of years ago when we were out by the pool and wanted something refreshing. My husband went in to make us a drink. When he went into the freezer we had many packages of mangoes and decided to use them and this drink was created - Mangoladas

Mallards in the Pool?

Spring time is in the air. The weather is getting warmer; flowers are poking their heads up out of the soil and trees are blooming. Here in Florida, we too experience these changes, although not as noticeable as up north. As the weather changes, the birds begin to make their way back up north. We had a wonderful experience of this today. 

My daughter and her best friend came for Easter and are enjoying the weather. We were out on the deck and her friend said "you have ducks swimming in your pool". How cute! I said, "no we don't".

Easter Mini Basket Favors


I wanted to make some little Easter baskets to place on the table for the kids. I had already made Crocheted Candle Holder favors for the adults. If you missed that post, you can see it here. 

I found these mini Chinese take-out boxes at the Dollar Store and thought they would be perfect. They were so colorful and  spring like.

Tea for the Birds?

Who says the birds don't like their feed in fancy cups? Well maybe they don't, but I like to hang something fancy for them to eat from. I love to pick up cheap cups and saucers and when I found this one, I decided to make a bird feeder out of it.

Chocolate Ganache-filled Macaroons


It seems like for ever since I wrote a post. I admire all of you that post everyday or almost everyday. Our Tiny has been such a focus for me and when she takes a turn for the worst, it is hard to deal with. She requires so much of my time. They have no idea why she is fine and then it starts all over again. So back to the hospital she goes today.


So what does Tiny have to do with Chocolate Ganache-filled Macaroons. Absolutely nothing. I had some extra time this week (wow, what a treat!) and since I haven't sent in goodies to my husband's work, I thought I would do a little baking.

Tiny - Our Little Miracle!

Sorry to post again about Tiny, but it has been a month since our Tiny went into the hospital so to speak. What an ordeal! It is like having a very sick child. Maybe this sounds funny, but that is how we feel about her. In a previous post, Tiny was doing better and scheduled to come home when she had another spell.

Update on Tiny!

I wanted to thank everyone who sent prayers for Tiny. It is amazing what prayer can do. Tiny is doing much better since my last post about her. We went to see her on Sunday and as I walked toward her crate and called her name, her tail started to wag excessively. Up until then, I did not get any response when I called her name.

Child's Jute Seat Rocker

I was out running errands  with the dogs and came across a yard sale close to home and thought why not even though it was late in the day. As I approached, the owner meet me and said, "great timing, I'm dealing". So I found a little cabinet that held spices, two children's rockers. One was a wicker rocker and one was a jute seat rocker.

Although it was in relatively good condition to look at, the dog had chewed on the rungs especially in the back.

Prayers are needed for our Tiny

I know that this is Valentine's Day and many of your will be celebrating, however, that will not be the case with me. This has been a difficult week and our soon to be one year old dachshund got sick on Tuesday night. She was trembling as I held her and she didn't want to be put down. She loves to be held so I didn't think too much of it.

Andes Cream de Menthe Chunk Cookies

Andes Cream de Menthe candies are great after dinner mints, but they are also wonderful in baked goods. I had a bag of Andes Cream de Menthe Chunks and on the back of the bag was a recipe for cookies. So these cookies were the result of that little bag of goodies.
They were easy to put together.

Warm Up with Pasta e Fagioli

This has certainly been a crazy winter. I know everyone up north is waiting for spring. We have even felt the cold affects down here in Florida. Much cooler temps than usual. So as the temperature drops, it is great to warm up with some soup. I have always loved Olive Garden's Pasta e Fagioli soup and when I came across this recipe, I decided to try it. I don't know where it came from, I only have a photo copy.   It turned out great.

It is not hard to make, but you do have to chop a lot. You could cut this time down by buying already chopped vegetables, but that would cost more. Depends on how much time you have.

Beadboard Valentine

 Last  week as I was cleaning out my barn, I found many small pieces of wood trim. If you saw My Unordinary Valentine, you know that I used the trim pieces to make that valentine. I found a piece of bead board that we used in the bathroom. My husband cut this piece wrong and we were going to throw it out, but I thought it might make another valentine for the front door at our other house. This one is a more traditional valentine.

Sour Cream Chicken Enchiladas

Looking for a simple and fast dinner idea? These chicken enchiladas are easy to put together and taste great. If you use a roasted chicken, it goes together even faster. I like to make my own shredded chicken. I takes a little more time, but I love the flavor. I will share how I do this in another post. 

I did not put the onions in this batch, since my stomach doesn't like them. You can change up the cheeses to suit what you like, these make a great combo.

I divided the chicken mixture among 6 flour tortillas, that is all I had on hand. I placed them in the dish with the seam side down.

 Next I made the roux.

I added the sour cream and green chilies to the roux and poured it over the tortillas. Added the remaining cheese and baked it at 400 degrees for 20 minutes. Yummy!

Sour Cream Chicken Enchiladas

 

Ingredients:


1 lb shredded chicken breast(can used a roasted chicken)

1 medium onion, chopped

1 tablespoon vegetable oil

8 flour tortillas, softened (8 inches each)

1 1/2 cups grated monterey jack cheese or 1 1/2 cups Mexican blend cheese, divided

1/4 cup butter

1/4 cup flour

1 (15 ounce) can chicken broth

1 cup sour cream

1 (4 ounce) can chopped green chilies


Directions:


1. In frypan, cook onion in oil over medium-high heat until golden. Add shredded chicken and heat through.

2. Divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.

3. Roll enchiladas and place seam-side down in 9x13" baking dish that has been lightly sprayed with non-stick cooking spray.

4. Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently.

5. Remove from heat; stir in sour cream and green chiles; pour sauce evenly over enchiladas.

6. Top with remaining 3/4 cup cheese (baking dish may be double-wrapped and frozen at this point) and bake at 400F for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

My Unordinary Valentine!

I wanted to do something different for my Valentine decoration this year, but what? I was cleaning  out some wood in the barn and created a pile of wood trim pieces that I used for testing paint colors. I hated to throw them away, but they were small pieces and not really "Valentine" colors. My mind started to work and I thought, why not a Valentine plaque. So here is what I created.

Broken washing machine, means new floor!

Nothing like seeing water floating all over your laundry room floor to make your day. Well that is what happened last Monday. Our laundry room is between the kitchen and the garage. Water ran into the garage but not into the kitchen. I had projects out there that had to come up off the floor and be dried off. What a mess!

The new washing machine couldn't be delivered until Wednesday night. We had put down Brazilian Cherry re-engineered flooring in the great room and into the kitchen. We stopped where the kitchen meets the laundry. It has been that way for 2 years. 

Here's the new floor. The dogs seem to like it. This is their area since I feed them here and their water bowl is here.

Old Wine Box gets a Facelift

I have a strong love of boxes. It is hard for me to pass up any type of box at a flea market or garage sale. You can do so many things with them. So when I saw these boxes at a garage sale a few years ago, I had to get them. Of course the price - 50 cents each, was also a contributing factor.

Some Red Color in the Cold

I know that many of you are dealing with extremely cold temperatures. We even dropped down to the low 40's last night. I know, get serious. It was cold for Florida.

Before the cold hit last night, I was outside with the dogs and saw this bit of red calling to me. As I got closer, I realized that these plants were blooming. It was so pretty that I thought I would send a little brightness to everyone who is trying to keep warm.

Turkey Pot Pie

Do you have any turkey leftovers from the holidays? Well, I did from before Christmas. I made a turkey before we left for Vermont and froze the leftovers. I love to make pot pies with leftovers. I have used beef, chicken, turkey and even ham in this recipe.

Elliott Pecans

I hope you had a wonderful holiday. Mine was fabulous. We actually had snow on Christmas Eve and some on Christmas Day. It was so nice to spend Christmas with my children and grand children. There is nothing like the joy on the faces of children when they see all those presents under the tree. Maybe they are a little spoiled :)

One of my presents came right before Christmas - these wonderful Elliott pecans. My brother-in-law manages a pecan farm in Georgia and this year they had a great crop of Elliott pecans.
