Sour Cream Chicken Enchiladas

Looking for a simple and fast dinner idea? These chicken enchiladas are easy to put together and taste great. If you use a roasted chicken, it goes together even faster. I like to make my own shredded chicken. I takes a little more time, but I love the flavor. I will share how I do this in another post.

I did not put the onions in this batch, since my stomach doesn't like them. You can change up the cheeses to suit what you like, these make a great combo.

I divided the chicken mixture among 6 flour tortillas, that is all I had on hand. I placed them in the dish with the seam side down.
Eclectic Red Barn: Rolled Unbaked Enchiladas
 Next I made the roux.
Eclectic Red Barn: Roux for Enchiladas

I added the sour cream and green chilies to the roux and poured it over the tortillas. Added the remaining cheese and baked it at 400 degrees for 20 minutes. Yummy!

Sour Cream Chicken Enchiladas

Ingredients:

1 lb shredded chicken breast(can used a roasted chicken)

1 medium onion, chopped

1 tablespoon vegetable oil

8 flour tortillas, softened (8 inches each)

1 1/2 cups grated monterey jack cheese or 1 1/2 cups Mexican blend cheese, divided

1/4 cup butter

1/4 cup flour

1 (15 ounce) can chicken broth

1 cup sour cream

1 (4 ounce) can chopped green chilies

Directions:

1. In frypan, cook onion in oil over medium-high heat until golden. Add shredded chicken and heat through.

2. Divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.

3. Roll enchiladas and place seam-side down in 9x13" baking dish that has been lightly sprayed with non-stick cooking spray.

4. Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently.

5. Remove from heat; stir in sour cream and green chiles; pour sauce evenly over enchiladas.

6. Top with remaining 3/4 cup cheese (baking dish may be double-wrapped and frozen at this point) and bake at 400F for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

I hope you enjoy this as much as we did.

Operation Smile and Campus Book Rentals

Operation Smile is a charity organization for children – donate non profit

As you may already know I am a retired college professor and between my husband and I we have 6 college graduates and several grandchildren who are nearing college age.  As a parent and professor I was constantly reminded of the huge cost that students incur when buying their text books.  If any of you are parents or even students, I’m sure you can relate.  Well, for a nominal advertising fee I have been asked to endorse a program being offered by CampusBookRentals and I have agreed.  This post was written by me and all opinions are 100% mine.

While they have an excellent web site and there are great advantages to renting from them;
-save 40-90% off of bookstore prices
    -free shipping both ways,
    -can highlight in the textbooks,
    -flexible renting periods,
I want to focus on two items of note.  The first and very important is that they partner with Operation Smile.

My Unordinary Valentine!

I wanted to do something different for my Valentine decoration this year, but what? I was cleaning  out some wood in the barn and created a pile of wood trim pieces that I used for testing paint colors. I hated to throw them away, but they were small pieces and not really "Valentine" colors. My mind started to work and I thought, why not a Valentine plaque. So here is what I created.

Now let me tell you how I did this.

Broken washing machine, means new floor!

Nothing like seeing water floating all over your laundry room floor to make your day. Well that is what happened last Monday. Our laundry room is between the kitchen and the garage. Water ran into the garage but not into the kitchen. I had projects out there that had to come up off the floor and be dried off. What a mess!

The new washing machine couldn't be delivered until Wednesday night. We had put down Brazilian Cherry re-engineered flooring in the great room and into the kitchen. We stopped where the kitchen meets the laundry. It has been that way for 2 years.

Here's the new floor. The dogs seem to like it. This is their area since I feed them here and their water bowl is here.

Old Wine Box gets a Facelift

I have a strong love of boxes. It is hard for me to pass up any type of box at a flea market or garage sale. You can do so many things with them. So when I saw these boxes at a garage sale a few years ago, I had to get them. Of course the price - 50 cents each, was also a contributing factor.

Some Red Color in the Cold

I know that many of you are dealing with extremely cold temperatures. We even dropped down to the low 40's last night. I know, get serious. It was cold for Florida.

Before the cold hit last night, I was outside with the dogs and saw this bit of red calling to me. As I got closer, I realized that these plants were blooming. It was so pretty that I thought I would send a little brightness to everyone who is trying to keep warm.

Turkey Pot Pie

Do you have any turkey leftovers from the holidays? Well, I did from before Christmas. I made a turkey before we left for Vermont and froze the leftovers. I love to make pot pies with leftovers. I have used beef, chicken, turkey and even ham in this recipe.

Elliott Pecans

I hope you had a wonderful holiday. Mine was fabulous. We actually had snow on Christmas Eve and some on Christmas Day. It was so nice to spend Christmas with my children and grand children. There is nothing like the joy on the faces of children when they see all those presents under the tree. Maybe they are a little spoiled :)

One of my presents came right before Christmas - these wonderful Elliott pecans. My brother-in-law manages a pecan farm in Georgia and this year they had a great crop of Elliott pecans.

Christmas and Movies!

In just a few days, Christmas will be here. It is hard to believe, but true. Are you a movie goer? I was just reading that Christmas Day has become a big day in the movie industry. Many studios like to release big-budget films on December 25th.
According to Box Office Mojo, an online movie publication and box office reporting service, no film has fared better on Christmas Day than "Sherlock Holmes," which premiered on December 25, 2009, earning just under $25 million in its initial day onscreen.

Last Minute Centerpiece

Need something on your side table, coffee table, or anywhere, why not create a cranberry candle centerpiece. I needed three for the round tables that we set up on our deck for our annual Christmas party. I knew I wanted candles, but didn't want to spend a lot and I didn't want them to take up too much room.

I looked in my stash and the fridge to see what might work. This is what I came up with.

2013 Ornament Exchange

This was my first year to participate in the Ornament Exchange, over at I should be mopping the floor. I was a little reluctant at first, not sure why. I had a fabulous time. We were paired up with another blogger that became our exchange partner. I met Sonya via email and we learned a little about one another. She lives in Buford, GA and has 9 Christmas trees in her house:

Candy Cane Wreath - Kids Activity

With school ending for the holidays, you might need a great craft for the kids to do. Why not make a Candy Cane Wreath. My neighbor's daughter loves to come to my house. She said I was "the world's best crafter"! Kids are so naive!!

We always do some sort of craft when she and her friends come over.
On Saturday, they were coming over to work on Christmas presents for their moms. She brought me this candy cane wreath that she had made. She is nine. What a lovely surprise.

Holiday Mason Jars

It seems that so many of us just love mason jars, myself included. They are so great to decorate with.  I have many from my Grandmother which I try to keep separate. About 5 years ago when I lived in Pittsburgh, I drove to Vermont to visit my grand kids in the summer. That year I went to a garage sale late one afternoon. They still had many items to sell and I think they were getting tired.

There were three boxes of mason jars. Needless to say, I was on them immediately. She had them priced at $5 per box. I am not sure how many were in each box - somewhere between 10 - 14 each. Some were large, but most of them were the small ones and all had their lids, like the ones in my picture below.

She saw me looking at them and said, "you can have all of them for $5". I tried not to fall over and grabbed them up before anyone else did. Since there was only one other person there, I was pretty safe.

Knotted Burlap Christmas Wreath

I was trying to decide what type of wreath to make for on the deck, hanging from the old window. I wanted to use materials that I already had so I looked through my stash. I had made a "burlap tied knot " banner for the 4th of July, if you missed that tutorial, you can find it here. So I thought I would try the same technique but only put them on a straw wreath instead of a banner.

Southwest Turkey Burger and Kale Chips

Don't get enough green vegetables?  Have you ever wondered what to do with kale? Kale is a nutritional powerhouse. One cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 206% of vitamin A, 134% of vitamin C, and a whopping 684% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus. Wow, move over spinach!

Love Cyrstal Chandeliers - Hate to Clean Them

Do you have crystal chandeliers? I have several. As I began to decorate for Christmas, I looked at my dining room chandelier and thought "oh yuck"! Way too much dust. They didn't even sparkle. Should have taken a picture when it was dirty.

Someone posted awhile back about how to clean crystal chandeliers, but I forgot to save it so that was out.

Dressing Up Grandma's Cutting Board

What a week I have had, the flu caught up with me and took me down. All I wanted to do was to crawl in bed and sleep. However, the dogs had other ideas. We spend a lot of time outdoors and they wanted to be outside. They were not sick.

When the dogs were little, I taught them to ring a bell, tied to the door handle, when they had to go to the bathroom. Well, that bell was ringing off the handle.  Every time I would lie down on the sofa, the bell would ring. After a few days, the bell came down.

I did manage to work on this cutting board that was my grandma-in-law's.

Orange Metal Stand - What to do with iit?

Not sure what this was. Seems like something you might find in a service station that holds some car parts.
Eclectic Red Barn: Orange metal stand

Found it in the trash and decided to take it home, since I can't seem to leave perfectly good items go in the trash. Now that I have it, I have no idea what to do with this bright orange thing. Any ideas ????
