A Cup of Chewy Chocolate Chip Cookies

A Cup of Chocolate Chip Cookies
Don't you just hate it when you try a new chocolate chip cookie recipe and they are too flat or too crisp and you want them to be chewy?  Well, I have a recipe that will give you those soft chewy cookies that you are looking for. 

Most chocolate chip cookie recipes that I have seen use all butter. 

Although there is nothing wrong with that, butter melts more quickly than shortening in a hot oven and the dough spreads - creating flat cookies. This recipe uses both butter and shortening causing your cookies not to spread out as much and stay more condensed - making them more chewy.

If you want a more cake like cookie, use all shortening. You can get a softer cookie by sweetening it with only brown sugar instead of some brown and some white sugar. If you would like the recipe for a soft and cake like cookie, let me know. 

If your cookies become too hard, you can add a slice of bread to the container. This will soften them up.

I did not take pictures of actually mixing up the dough, only end results. Here are the directions.

1/2 cup shortening
1/2 cup butter
1 cup packed brown sugar
1/2 cup granulated sugar
1/2 tsp. salt
2 eggs
1 tsp. vanilla
2 1/2 cups all-purpose flour
1 1/2 cups semisweet chocolate pieces
1 cup chopped walnuts or pecans (optional)

Preheat oven to 375 degrees. In a bowl beat shortening and butter on medium to high speed for one minute. Add brown sugar, granulated sugar, baking soda, and salt; beat until combined. Beat in eggs and vanilla until combined. Beat in flour (you may have to add some of the flour and beat the remainder by hand if it gets too stiff). Stir in chocolate pieces and nuts if you are using them. 

Chill dough for 20 to 30 minutes. You don't have to do this, but it keeps the dough from spreading out as they cook. Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake cookies for 8 to 10 minutes or until edges are browned. You want them to be soft to the touch as if they might need to be cooked longer. Cool on wire racks. This recipe makes around 60 cookies, depending on the size of your cookie.
