3 Ingredient Cauliflower and Chickpea Side
This dish is healthy, creative and the best part easy. With only 3 ingredients, which includes the oil to cook the veggies in, how can you go wrong.
Here is what you need for this delicious side dish.
Ingredients:
- 1 can chick peas, drained and rinsed
- 1 head of cauliflower (can used frozen) cut into flowerettes
- olive oil for sauteing
Directions:
Pour a small amount of olive oil in a pan. Add the cauliflower and chickpeas. Cook on medium for about 5 minutes and then reduce temperature to low and cook until soft and browned.
The cauliflower and chickpeas become almost caramelized . Add a little salt and pepper and this is a wonderful side dish.
Now if you need a little color add some cilantro or parsley. I added some cilantro the second time I made it because I love cilantro, but I love this dish plain as well.
