Limoncello Biscotti
I love biscotti. I could eat it everyday. You can make biscotti with so many variations. So I wanted to make some the other day and wasn't sure what kind. I was missing the liquid ingredient. So I looked in my fridge and there are 2 bottles of Limoncello. One is creamy and the other is clear.
I have made Limoncello cake and it was awesome. So why not in biscotti? I decided to use the creamy version, just because.

Well, I wasn't going to make cookies this year, but then a friend stopped by and brought me a bottle of eggnog. 
So, when given eggnog, make biscotti. The recipe calls for both eggnog and rum, but this already had it in there, actually bourbon. The recipe makes a lot so I will give them to my neighbors - adults only. I will make something for the kids. You could always make these with just eggnog and no liquor.

Do you love biscotti? I do, but with some recipes, they can be really hard. I know that is fine if you are a dunker, but I am not. I wanted a biscotti that was firm but still a little chewy. So here is a recipe for those who want a little softer biscotti.
