Healthy Mango Parfaits

Still making dishes with all my mangoes. I love to have a light and refreshing dessert once in awhile and these parfaits hit the spot. I changed the original recipe from Kraft Foods to make it healthier. The family had no idea I changed to light ingredients.

This is a simple, no bake, no cook recipe. My kind of dessert! 

I have made this parfait before with other  fruits like strawberries, blueberries, rasberries and a combination of them. With all the mangoes, why not use mangoes.

I made mine with light ingredients to save some calories.  It tasted great, but you can always use original ingredients. 

One note - make sure your cream cheese is very soft or you will get lumps in your pudding. Don't rely on your mixer to make it smooth - I tried that. Didn't work. You could also use other pudding flavors, like French Vanilla or White Cheesecake.

I placed mine in whiskey glasses instead of parfait ones. I had to go with real whipped cream however. The calories are about the same, but the taste is so much better.

Mango-Cheesecake Parfaits

Ingredients:
1pkg. (8 oz.) Light  PHILADELPHIA Cream Cheese, softened
1-½ cups cold skim milk
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding, fat free
1-½ cups thawed Light COOL WHIP Whipped Topping, divided
2 mangos, peeled, seeded, chopped


Directions:

BEAT cream cheese in medium bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; mix well. Whisk in 1 cup COOL WHIP.

LAYER half each of the mangoes and pudding mixture in 8 parfait glasses. Repeat layers.

TOP with remaining COOL WHIP or whipped cream.
