Lighter Creamy Corn Chowder

Creamy Corn Chowder


We had some cool temps the other night and I decided to make Corn Chowder. Seemed so right on a cool evening. 



I like this recipe, because it is lower in calories than most. However, you can use regular ingredients and it will be great too. 


Sometimes, soup is just what you want and this one is lower in calories and that makes it even better.

Ingredients:
1/2 pound turkey bacon (can use regular bacon if you want)
4 cups diced potatoes
2 cups diced onions
2 cups fat free sour cream
1 1/2 cups fat free milk
2 10 1/2 oz. fat free, low sodium cream of chicken soup
2 151/2 oz. cans fat free, low sodium, whole kernel corn, undrained
1 carrot diced. (optional)
 
Directions:
1. Cut bacon into pieces and cook for 5 minutes until brown. Drain off some of the grease so you can fry the bacon.

2. Add onions to pan that you cooked bacon in. Brown lightly. Remove to dish. 

3. Add the potatoes and carrots to enough water to cover them and cook until almost tender. Drain.

4. Combine sour cream, milk, corn and soup in a bowl. Mix together. Add to potatoes along with the onions.

5. Cook for 30 - 45 minutes until potatoes, carrots and corn are tender. Stir often.
* you could put all of it into  crock pot and cook for 2 hours on low. 

6. Serve soup with cooked bacon on top.

      I seem to go through stages where I make it several times a year and then not for a few years. I like this version since it is lower in calories and I can have more. lol!
