Yummy No Cook Side Dish

When the weather warms up, the last thing I want to do is heat up the kitchen. We are camping this Father's Day weekend and a number of friends are getting together for dinner. We all bring something and have great fellowship and fun.
Eclectic Red Barn: Cold Pea Salad

I decided to make this Pea Salad - no cooking involved. This makes a large serving, so if you are making it for your family, you probably want to cut it in half.


Eclectic Red Barn: Cold Pea Salad with Almonds

You can always add bacon bits to this salad. I am not a big onion fan so sometimes I leave the onion out and add the bacon bits. My friend is a vegetarian so I left out the bacon bits this time.

Pea Salad with Almonds

Ingredients:
  • 2 (16 ounce) packages frozen petite peas
  • 4-6 ounces smoke-flavored almonds, finely chopped (regular almonds will work too)
  • 1/2 onion, finely chopped
  • 1 cup mayonnaise, or more to taste
  • ground black pepper to taste

Directions:
  1. Place frozen peas in a colander, rinse under cold water until thawed.
  2. Drain and transfer to a large bowl.
  3. Add almonds and onions; mix well.
  4. Fold mayonnaise and black pepper into pea mixture until evenly coated.
  5. Cover and refrigerate until ready to serve.

  • You can add bacon bits to this salad as well.
