Andes Cream de Menthe Chunk Cookies

Andes Cream de Menthe candies are great after dinner mints, but they are also wonderful in baked goods. I had a bag of Andes Cream de Menthe Chunks and on the back of the bag was a recipe for cookies. So these cookies were the result of that little bag of goodies.
They were easy to put together.
Only problem, if you can call it that, is that it needs to sit in the fridge for an hour once you mix them up. So if you are in a hurry, then you need to allow for that.  

I didn't take pictures mixing the dough, since you put everything but the Andes candies and flour in a bowl and mix. Add the Andes candies and stir. Finally add in the flour. Mix well and put in the fridge for an hour. 

The cookies have a nice minty flavor when you bite into them.
I didn't want them too big and these turned out a nice size. I cooked mine for about 10 minutes, which was just perfect.
I decided to send some, actually most of them, into my husbands office for Valentine's Day since we will not be here. They love sweets there and I don't need them.

Andes Creme de Menthe Chunk Cookies


Ingredients:

½ cup salted butter, softened

¾ cup dark brown sugar

½ cup white sugar

1 tsp. baking soda

1 tsp baking powder

2 tsp. vanilla extract

2 eggs

1 package (10 oz.) Andes Creme de Menthe Baking Chips

2 ⅔ cups sifted all-purpose flour

Beat butter, sugars, baking soda, baking powder, vanilla and eggs until well mixed. Stir in Andes Baking Chips and mix. Then add flour. Chill about 1 hour in the refrigerator.

Measure out about 1 0z of dough (one heaping teaspoon of dough). Form into balls and place on ungreased cookie sheet. Slightly flatten out the balls. Raise oven rack one level above middle and bake at 350 degrees for about 8-10 minutes. Cool on pans for two minutes before transferring them to racks to finish cooling.

Makes approximately 4 dozen.

  2. I love Andes mints. They are so melt in your mouth good. I'm not very patient when it comes to baking at home so I always avoid anything that has to sit in the refrigerator for any length of time. Probably just as well because I doubt these would be on my diet :)

  3. Good Evening Bev, Well I never, Creme de Menthe used to be a drink which was bought at Christmas time, but only one or two drinks were drunk from the bottle. So it always resided at the back of the cupboard... forgotten about. I love chocolate and I love mint, so I just know I am going to love these little cookies. Certainly a recipe I am going to try, but I will have to find an alternative to Andes Creme de Menthe chunks as I don't think they are sold here in England. I think these biscuits will be perfect for Easter time.
